Tokay / Topaque

Tokay wine, also known as Tokaji, is pronounced ‘toe-kay’. It hails the Tokaj region in Hungary.

The wine is made from a fruit fungus called botrytis that grows on berries. The fungus grows on the berries in cool conditions and then dries when the weather heats up.

This method of rotting and drying makes the grapes shrivel and become very sweet. One of the most popular styles of Tokay wine is Aszu. This wine is a sweet dessert wine with strong amber colours that contain rich caramel and fruit flavours.
