The Billet Doux is a preservative free wine made with fruit from the Cairnmuir Vineyard. Each year a small parcel of Pinot Noir is identified as appropriate for producing this wine.Made in tiny quantities, it is hand bottled with a cork closure. 100% Pinot Noir from own rooted vines, planted 1998. Biodynamic principles, practiced from 2011. Organic certification to European Union equivalence.
All fruit hand-picked and destemmed. Aged for 11 months in French oak. Zero additions. Bottled March 2019, no added Sulphur. 13.8% alc/Vol. 700 x 6 bottle cases.
