The fruit for the Field Blend all was handpicked on the same day from our vineyard in Margaret River. This resulted in the different varietals being picked at different stages of ripeness – the chenin providing great acidity whilst the semillon and chardonnay, being slightly riper, filled out the palate with more structure The varietals were all co-pressed and co-fermented. Half of the juice went through barrel fermentation in old oak – this went through a natural ferment at slightly higher temperatures. The wine remained in barrel for six months on lees, with lees stirring to create more body. The other portion was tank fermented for fresher component, and then blended back.
